as personal chef to President and Nancy Reagan.

 over a velvety sauce  

 

 Duck Confit Alexander   thinly sliced and layered duck breast on wilted spinach greens with

sundried tomato and pine nuts, balsamic and red wine pan jus sauce 

 

Cornish Game Hens   oven roasted with a hazelnut, oyster mushroom stuffing and

pan sauce reduction served over traditional rice pilaf or

 and raisins, slow roasted and encrusted in Dijon mustard, fresh

 seasoned bread crumbs and butter parmesan crumbles 

 

Brandied Apple Pork    tenderloin medallions on potato cakes, topped with apple brandy sauce  

 

 

Veal

Osso Bucco    veal shank simmered until fork tender with root vegetables and

 Tuscan beans is a savory sauce

Ahi Tuna   Black and white sesame seed crusted Ahi steak seared rare to medium

with a raspberry vinaigrette   wine sauce 

 

Grouper Crab Bake   fresh locally caught grouper filet with authentic Maryland crab stuffing,

 lemon pepper bread crust with mornay sauce topping 

 

Chesapeake Style Crab Cakes   lump crab delicately seasoned and sautéed the
Maryland
way with
very little filler and topped with a remoulade sauce (2 per person)
